Since @themoviesmith chose my top favorite, Jeopardy! (1984– ), these are my second and third choices:
Password (1961–1975)
The original version with Allen Ludden as the host and Betty White as a frequent celebrity contestant.
Two celebrity-contestant teams compete to guess words by giving one-word clues in this all-time classic game show.
I just realized that this effectively would be the Betty White choice.

Concentration (1958–1973)
Two contestants revealed pieces of a rebus-like puzzle by matching 15 pairs of cash amounts and prizes, then tried to solve it before the other.
I prefer the original host, Hugh Downs.

As my two favorites are already taken (Jeopardy and Concentration), I'm going to have to go:
Match Game (the version from the 70's with Gene Rayburn as the host). It was renamed every year as Match Game '73, Match Game '74, etc.
The Newlywed Game (the version from the 70's).
I think that both of these were actually comedy shows masquerading as game shows!

Since What's My Line is taken, I'll go with long standing Spanish game show Saber y ganar (Knowing and Winning)
I don't watch it anymore since they moved it to a different time, but I enjoyed it for a long time.
