I believe I remember that there's a fairly important donkey in 'The Naked Spur' but I can't find a photo. 

There's also a donkey in 'Navalny' that, although, doesn't get much screen time, is pretty memorable and is in very sweet moments of the film. IMDb has no photos of the donkey but I'll look to see if I can find one elsewhere and submit it. 

My favorite is EO...you can add the one from Inisherin that Suzy suggested.
