Sergio Leone handled this genre brilliantly. For a 'Western' genre movie I personally prefer:

1. Amazing cinematography.
2. Dirty and sharp looks.
3. Stylish shooting action.
4. Mind-blowing score.

And Leone's movies have all of those.

Among the modern Westerns 'Django Unchained' followed Leone's footsteps and did got overall.

If you are including Tarantino with only two movies, then the Coen brothers should also qualify, they also have two well regarded films: True Grit and The Ballad of Buster Scruggs.

 

Also John Huston:  The Misfits, The Treasure of Sierra Madre, The Unforgiven

 

Kevin Costner: Dance with Wolves, Open Range

 

William Wyler: The Big Country, The Westerner, The Cowboy and the Lady.

 

Maybe listing the best films of each director in the list could help.
