Why is “western-music” being deleted as a keyword?
For some reason, “western-music” is being deleted a a keyword. It is a valid keyword, and even possibly a yet unacknowledged Music subgenre. It DOES NOT just mean “music used in a Western title.” Here’s the Wikipedia definition:
Western music is a form of country music composed by and about the people who settled and worked throughout the Western United States and Western Canada. Western music celebrates the lifestyle of the cowboy on the open ranges, Rocky Mountains, and prairies of Western North America. Directly related musically to old English, Irish, Scottish, and folk ballads, also the Mexican folk music of Northern Mexico and Southwestern United Statesinfluenced the development of this genre, particularly corrido, ranchera, New Mexico and Tejano. Western music shares similar roots with Appalachian music (also called country or hillbilly music), which developed around the same time throughout Appalachia and the Appalachian Mountains. The music industry of the mid-20th century grouped the two genres together under the banner of country and western music, later amalgamated into the modern name, country music.
Perhaps it should be changed to country-western-music, although some make a distinction between those two.
Why is this objective and accurate keyword being deleted? Perhaps, whoever is deleting it does not understand what it actually is.

I don't know, but the term is not the most clear. For example, Britannica's entry Western music is about music from Europe or the Western world.
As it is also not one of the music genres defined in IMDb's list of subgenres, I can understand that someone may want to get rid of the keyword.
Your Wikipedia quotation says that western music is a form of country music and that the term "country and western" has developed into "country music". So based on your own source, it makes sense to use the broader term country-music, which is also in the subgenre list.

Long time past. I have replaced most of them. Now, the question is: Should it be “country-music”? “western-music”? OR “country-western-music”?

The issue with this keyword is definitely caused by the fact that it ends in the suffix "-music." IMDb's automated system for accepting and rejecting most keywords disfavors keywords that end in genre suffixes, unless the keywords are listed on the "accepted" list of subgenre keywords.
