Out of the current list of 40 Primary Profession categories, which one fits my unique starring roles on my paranormal reality tv series?
That list is comprehensive, but wondering now if I should change my credit listing to another on that current list so my main profession reflects on IMDb accurately.
But WHICH one would fit - I have starred in several paranormal reality tv series as an internationally- known psychic medium, & psychic crime profiler.

It all depends on how you were credited in the project.
If you appeared on-camera, the credit should be listed in the Cast section.
(Example credit)
Name - Herself: psychic medium
If you worked off-camera, the credit should be listed in the Other Crew/Miscellaneous Crew section.
(Example credit)
Name - psychic medium or psychic medium consultant

ljdoncel was correct on the other thread, "self" isn't one of the 40 primary professions, therefore will not be treated as a primary profession for display purposes. Your credits are listed accurately on IMDb in the "self" section, however this option is always disabled from the name page header display across all of IMDb name pages. For example, please see https://www.imdb.com/name/nm0538196/?ref_=fn_al_nm_1 where there is no listed profession as the entirety of the filomography is "self".

Can I have NOTHING displayed there as in the "John Major" example you provided? (Please say this can be done.)
Or will I constantly have to see that "Miscellaneous Crew" displayed up top of my page - which is so NOT descriptive of the entirety of my work on television throughout my career?
