First, I second jen’s Union station shootout in “The Untouchables”.
- The Quick and The Dead” Cory and Ellen/“The Lady”’s showndowns with Herod (A.K.A. Two showdowns in the same scene).

I down know if this will fit your list because of Serico Leone’s style of making the build up to the violence long and slow but once the violence starts, he gets it over fast : the show down of the three gunmen nearing Harmonica at the train station in “Once Upon A Time In The West”.

I also second jen’s - The Matrix - rescuing Morpheus
And
- Silverado - the final showdown (well actually the Emmett and McKendrick horseback gunfight. The Paden and Cobb gunfight, the film’s final showdown, was good but not better or more memorable as the horseback gunfight was.)

Now that we know your favourites, how about we add some more films?

Wild Bunch has the shootout at the end with the Mexicans and the titular Wild Bunch, much like has been suggested.
There's also a standoff in Good Bad Weird, in addition to the aforementioned Good Bad Ugly. If you don't want too much of a duplicate, there's also the chase just before the standoff in Good Bad Weird that's full of gunplay.
The ending of Bittersweet Life, the Kim Jee-woon film, has an awesome shootout.
El Dorado with Robert Mitchum and John Wayne has a shootout at the end. Should include that one.

I really don't know if war films really have a "shootout", since the combat is more, for want of a better word, organized. Like, in Good Bad Ugly in the town with Blondie, Tuco and Angel Eyes' men, that's a small shootout, but the Civil War battle at the bridge is more of a battle than a shootout. Maybe I'm reading into it too much, but that's my stance. Take it as you will.

Someone Who wears pants, someone is probably going to tell you this, but the picture you had selected for the shootout at the end of El Dorado is not from that shootout. It is a still from a shot that was never used in the film. A shot from the reverse angle was used in the film instead. And it is from a scene earlier in the film when Sheriff J.P. Hera (Mitchum) was still hungover and had Johnny Diamond’s recipe for sobering people up still in him. The location of the shot is when Hara is crunching down on the ground to examine a blood trail of the man who either Hara had nicked or Mississippi (Caan) hit him with the sign right after the shoot out in the church and the saloon scene where Hera arrests Jason. I would nominate that whole section of the film of walking down the streets/church shoot out/ the sign shooting and arresting Jason in the saloon as one whole long shootout since they fallow so closely after on another in the film as if they are all one scene sequence. But I can’t blame you for selecting that image since the IMDb doesn’t have a shot from the final gunfight in the film. In fact, the best I could find on the internet for a picture from the final gunfight is a picture of McClould (Christopher George) getting shot.
How do I know where that still’s location in the film would have been if it had been used? Three reasons: 1) I have a copy of the movie on dvd. 2) the clothing - Hera wears that dirty torn undershirt when he was still a drunk. He received new clothes, a burandy colored shirt and vest, in the bathtub scene and that is what he wears in the final gunfight. Thornton (John Wayne) changes his shirt from the blue shirt in that image to a burnt orange shirt (which looks red in the outdoor night shots) and adds a grey whitish coat. This first image on this page is from a scene just before the final showdown and they are wearing the clothes they wear (except for the coat) in the final shootout. In fact, the first image on this page is from the scene just before the final shootout. And the last image is just before they enter the church in the middle of the film where Thornton says to Hara “Are you alright... No, you’re not.” In which one is Hera wearing the torn undershirt? The one before they enter into the shootout in the church. Three, the only Hara squats in the street to look at the ground is at the spot where Mississippi hit the escaping man with the sign, and that scene used the shot from reverse angle to the one in your suggested image.
But as a consolation gifts for this post, upon research for this post, I came upon these.
